Quick and Easy Tomato Basil Bisque

Ingredients

2 oz olive oil
4 shallots, finely minced
2 cloves of garlic, finely minced
1 14 ounce can of tomato soup
2 cups chicken stock
1 cup heavy cream
2 oz fresh basil, sliced as thin ribbons
1 quarter cup brandy

Directions

Sweat the shallots and garlic on medium heat until light golden brown. Add the chicken stock, cream and tomato soup. Bring to a simmer and add the fresh basil and brandy. The brandy will add brightness and richness to the soup.
